Nut Butter Breakfast Cookies

Ingredients
  

  • 1 tbsp ground flax meal
  • 3 tablespoons hot water
  • 1 1/2 cups rolled oats
  • 1/3 cup nut butter of choice almond, peanut, etc... 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • 1/4 cup dark chocolate chips/chunks

Instructions
 

  • Preheat the oven to 350 degrees.
  • Prepare parchment lined baking sheet.
  • Combine the ground flax and hot water in a small bowl and stir until mixed. Let sit for 3-5 minutes, or until slightly thickened.
  • In a large bowl, combine the almond butter, oats, maple syrup, cinnamon, and flax mixture. Add the chocolate chips to the mixture and stir until combined.
  • In tablespoon sized portions (or using a mini ice cream scoop), drop cookies onto the parchment lined baking sheet. You may need to press slightly with the back of a spoon. Bake for 10 minutes and allow to cool completely before eating or storing.
